Power Coconut Granola

Coconut is like, my LIFE. I can’t get enough of it. So I decided to toss together an awesome MULTIFUNCTIONAL granola that’s sure to give you a burst of energy. A handful of this in some yogurt for breakfast, or just a nibble right before a workout, this granola is sure to impress 😀 😀 😀

I like to throw in a good tablespoon or two of this into a bowl, add a spoon of greek yogurt, and some almond milk and it creates this DELICIOUS, crunch yet smooth, and thick “porridge” that’s just amazing on those hot summer mornings.

Also, this makes for a fun little gift you can dish out to your friends when they come over for a bite or two! I mean, you can get these little mason jars 12 for about $5 at Walmart and you just fill em up and hand them out!

Ingredients:

– 2 cups rolled oats

– 1 cup trail mix, or whatever nuts you want

– 1/2 cup shredded coconut unsweetened

– 1 teaspoon coconut extract

– 1 tablespoon dark cocoa

– 1/2 cup of honey

– 2 tablespoons of peanut butter

– 3 tablespoons of coconut oil, melted

– pinch of salt

Directions:

Mix everything together and pop it into a 350F oven for 15-20 minutes. It won’t be “dry” when it comes out, but it will be once it cools off! Store in an airtight container for up to 2-3 weeks!!!!
