So I’ve been on a total matcha craze lately, so I thought I’d toss together a super quick matcha macaroon recipe! They’re easy to make, healthy, and they’re just so cute to look at!

But anyways, here we go!
– 1 tablespoon of DAVIDsTEA Matcha Matsu
– 2.5 cups of shredded, unsweetened coconut
– 2 egg whites
– 1 tsp vanilla extract
– pinch of salt
– 2-3 tablespoons of honey (adjust to how sweet you want)
So all you need to do basically, is to beat the egg whites until they’re soft peaks, throw in the matcha, and whisk until it’s properly incorporated. Then, fold in the coconut and honey and toss in the rest of the ingredients, and scoop them out into little balls (I used a tablespoon measure). Lastly, put into a 350F oven for 15-18 minutes and you are done!
I mean, they basically make themselves, it’s that easy.
** depending on the size of your egg whites, you MIGHT want to add a bit more or a bit less coconut. What you’re looking for is for the mixture to come together properly without looking too try/too wet 🙂
